SITSS00069 – Food Safety Supervision Skill Set
This Food Safety Supervisor (FSS) refresher course is for students who already hold a NSW FSS Certificate (with the unit codes SITXFSA001 and SITXFSA002) which is about to expire or has expired less than 90 days ago. If your certificate expired more than 90 days ago, this course is not appropriate for your circumstances, and you will need to complete the full NSW FSS course here.
NSW FSS certificates have a validity period of five years from the date of issuance. To obtain a new certificate, you must renew your NSW FSS training. This course helps current or recently expired FSS certificate holders obtain re-certification.
Please note that this course is specifically designed for the re-certification of existing NSW FSS students. Upon successful completion, you will receive a Statement of Attainment containing the latest Accredited Food Safety Supervisor units, along with a renewed NSW Food Safety Supervisor Certificate (the Blue and Orange Certificate) valid for five (5) years.
This course is not valid for those who have retail food safety units such as SIRRFSA001.

Qualification | Upon successful course completion, you will receive a Statement of Attainment with the new units (SITXFSA005 and SITXFSA006) which will be immediately available for download via the My Courses tab in your student account. Please note, your Statement of Attainment is not the same thing as the Blue and Orange Certificate. These certificates are processed manually. You will receive a digital copy of your Blue and Orange Certificate via email. A hard copy will be sent to you in the mail via Australia Post. It takes five to seven business days for these to arrive. |

Industry Updates
From December 8, 2023, new legislation will come into effect which requires all Australian businesses that prepare and serve food to have trained Food Safety Supervisors available on their premises at all times. The Standard 3.2.2A is part of the Food Standards Code administered by Food Standards Australia New Zealand (FSANZ).
Completion requirement
To complete this course, you will need:
A unique email address: This email address cannot be used by another student as it becomes your unique login username.
Identification: You must have valid photo identification (must not be expired more than 3 months). Acceptable photo identification can include: Passport photo page, driver’s license, Key Pass, Photo Card, and student photo ID card (must include date of birth).
Once you log in to the system, you will be prompted to upload a copy of your photo identification.
Unique Student Identifier (USI): Provide a USI. It is very easy to do and is part of your registration process with us and is a government requirement. All training providers are required to collect your USI. Click here to visit the USI website.

Assessment
This is a Recognition Prior Learning pathway available only to students re-certifying their Food Safety Supervisor NSW certification.
This Recognition Pathway (Recognition of Prior Learning) involves training and assessment in the key focus areas of:
– Cleaning and sanitising
– Safe egg handling
– Allergen management
You will be assessed using multiple-choice questions based on case studies provided in the course.
To be deemed competent in this subject, you are required to answer ALL questions in ALL sections correctly.
You will also be asked to provide proof of your original units of competency in your course by uploading copies of your original Statements of Attainment and Blue and Orange Certificate.
Multiple-Choice Questions
There are a number of sections in this course. At the end of each section is an assessment. You are required to study each section in sequence and answer every question correctly to move onto the next section.
How it Works:
1. Read the question
2. Select your answer/s from the selection of answers given
3. Click Submit
4. Move onto the next question
5. At the end of the questions, you will receive the result of your assessment.
If you answer all questions correctly, you will progress to the next section.
If you answer any questions incorrectly, you will have the opportunity to resubmit these questions. You will be given feedback on which question you answered incorrectly. You can take the multiple-choice assessments as many times as you need.
Once I successfully complete my course, how long will it take to get my Blue & Orange Certificate?

The Blue and Orange certificate issues by New South Wales Food Authority are processed manually. You will receive a soft copy of your Blue and Orange Certificate via email. A hard copy will be sent to you in the mail via Australia Post. It takes five to seven business days for these to arrive.
FSS refresher training presents an opportunity to renew skills and knowledge in core food safety issues relevant to the hospitality and retail food service sectors as well as upskill FSS in current food safety focus areas.
In considering the key elements of the FSS refresher training, the Food Authority undertook a review of compliance results from the retail food service environment over 2010-2015 as well as a review of foodborne illness incidents from the retail environment. This review identified three key issues:
– unsafe handling of eggs and raw egg products
– inadequate knowledge of allergen management, and
– poor cleaning and sanitising practices.
Cleaning and sanitising is explicitly covered by the units of competency, for SITXFSA201 Participate in safe food handling practices and SIRRFSA001A Apply retail food safety practices; however, modules on safe egg handling and allergen management are not specifically stipulated as components of the Units of Competency. The FSS refresher is an opportunity to impart additional skills and knowledge in these food safety focus areas.
The Food Authority engaged Charles Sturt University (CSU) to develop learner guides in three key focus areas:
– Safe egg handling
– Allergen management
– Cleaning and sanitising
